This recipe is the favorite summer salads I make . Simple , delicious , sweet and savory. I found this recipe among one of my magazines several years ago . I don’t remember the publication but the recipe stuck . Enjoy! —Karen
Ingredients

8 handfuls
Mature spinach
-
1 cup
Red onion
-
1 cup
Crumbled Goat Cheese
-
2 cups
Sliced strawberries
-
1 cup
Whole pecans

1/2 cup
Extra Virgin Olive Oil

1/4 cup
Balsamic vinegar
-
1 teaspoon
Salt
-
1/2 teaspoon
Black pepper
Directions

In a serving bowl add washed spinach and remove large stems, thinly slice a peeled red onion add to spinach , add washed, hulled , sliced strawberries, sprinkle pecans on top , then crumbled goat cheese

Mix Extra virgin olive oil , balsamic vinegar, Salt and pepper , pour over salad , gently toss salad
