Truly a one pot wonder. Chicken breasts, zucchini, aspargus, tomatoes, and fresh basil create this mouth watering meal in just minutes. —Dash of Amy
Ingredients

thin chicken breasts

2 tablespoons
olive oil, divided

1/2 teaspoon
Mrs. Dash onion & herb

1/2 teaspoon
Mrs. Dash garlic & herb

1/2 teaspoon
Mrs. Dash Italian Medley

2 teaspoons
salt, divided
-
1/2 teaspoon
black pepper, divided

1
large zucchini, halved then cut in thin slices
-
1
bunch fresh aspargus, cut in 2 inch pieces
-
1
can diced tomatoes (basil, garlic, oregano)

1/2 cup
chicken broth
-

garlic cloves, minced

fresh basil leaves, coarsely chopped

4 ounces
fresh Parmesan cheese
Directions

Heat a deep skillet over medium heat and add one tablespoon of olive oil and chicken.

Sprinkle chicken evenly with seasonings, and 1/2 tsp salt, and 1/4 tsp black pepper.

Cook 2-3 minutes, then flip the chicken, and cook another 2-3 minutes. Transfer to a plate.

Add 1 tablespoon of olive oil to the pan, and then crush the garlic.

Cook one minute, then add the zucchini and aspargus; cook 3-4 minutes.

Add the tomatoes, broth, 1 1/2 tsp salt, and 1/4 tsp pepper, and mix well.

Allow the liquids to lightly boil, and cook until zucchini is fork tender, about 2 minutes.

Add fresh basil and mix it in.

Sprinkle the Parmesan cheese evenly over the top and turn off heat once it melts.
