French omelette with feta and crudité salad

Sometime, you just want to eat smart but quick. In France, the omelette is perfect for that. There is protein and it’s good! —Tasty and Frenchy

  • Prep time 10 minutes
  • Cook time 7 minutes
  • Serves 2
  • 4 eggs
  • 2 tablespoons chopped parsley
  • 1/4 cup scrambled feta cheese
  • 2 tomatoes
  • 1/2 cucumber
  • 2 handfuls baby spinach
  • 1 avocado
  • salt and pepper
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
In This Recipe
  1. Cut the tomatoes, cucumber, and chop baby spinach. Cut the avocado. Serve in a plate, salt and pepper and pour balsamic vinegar and 1 tbsp olive oil.
  2. Beat the eggs, add parsley and feta cheese.Salt and pepper. Heat a pan over high heat. Pour 1 tbsp olive oil and pour the eggs mixture. Let it cooke for 7 minutes, do not flip but fold one side. Serve.
