Quick and easy salad using my Michigan garden tomatoes.....a summer taste treat! —inpatskitchen

Ingredients
  • 3 Beefsteak, Beefmaster or Big Boy tomatoes
  • 1/2 medium red onion
  • 1/2 cup crumbled gorgonzola or blue cheese
  • 15 kalamata olives
  • 4 tablespoons extra virgin olive oil
  • salt and pepper to taste
Directions
  1. Cut the tomatoes in wedges and thinly slice the red onion half. Toss all the ingredients in a bowl drizzled with the oil. Add salt and pepper to taste. Enjoy at room temperature!

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining.
