Crispy Cheddar Bottom Eggs

This recipe for fried eggs only requires two ingredients! Sharp cheddar cheese and you guessed it, eggs. If you like crispy golden brown cheese then you will love it. You will need a small 6~8 inch nonstick frying pan and a wooden spatula. Really, you don't need and oil or butter! In fact, not using any is what allows the cheese to get perfectly crispified. What You'll Need

  • 3 Eggs
  • 4 tablespoons Shredded cheddar cheese
Directions
  1. Sprinkle 4 tablespoons of shredded cheddar cheese evenly onto a small unheated nonstick frying pan. I prefer sharp cheddar.
  2. Turn on the stove to medium heat to melt the cheese and to start the crispification process; about 1 minute. Crack 3 eggs into the pan on top of the cheese. Continue cooking for 3 minutes. Pop the yolks if you like, but be careful to keep the cheese undisturbed in the bottom.
  3. When the cheese turns crispy and golden brown flip the whole thing with a wide wood or silicone spatula. It may break if it's your first time but that's okay, just put the pieces back together. Lower the heat to low and cook it for 1 minute.
  4. Contrary to the recipe's title, serve it cheese side up to show off that gorgeous crispy lacey golden brown crust.
  5. Please note: in the photo the final step is the bottom left, (not the bottom right). Also the cheese is not as hard as frico.

I do this with scrambled eggs. My preferred cheese is habanero pepper jack and I add a little milk to the scramble mixture. These are great for egg sandwiches on toast as is or with bacon, ham, and/or lettuce and tomato. Use your favorite condiments to customize your sandwich and enjoy any time of the day! Thanks!
