3 cups
chopped kale
-
1/2 cup
chopped sweet peas

1/2 cup
chopped broccoli

1/2 cup
shredded carrots
-
1/2 cup
chopped cucumbers

1/2 cup
shredded purple cabbage

1/4 cup
thinly sliced green onions
-
1/2 cup
halved grape tomatoes
-
1/2
avocado, sliced
-
1/2 cup
chopped almonds
-
3-4 tablespoons
olive oil
-
1
clove garlic
-
1/4 teaspoon
dried ginger
- Dressing
-
1/4 cup
olive oil
-
1/8 cup
coconut aminos
-
1
orange, juiced
-
1 tablespoon
maple syrup (or honey)

salt & pepper, to taste

1/4 teaspoon
dried ginger
Directions

Heat a small sauté pan and add 3-4 tbsp of olive oil.

Once hot, add chopped almonds and sauté for about 2 minutes on high, stirring frequently.

Add the chopped garlic clove and dried ginger and continue to stir.

When almonds begin to brown, turn off heat and remove pan – the almonds will continue to cook so you may need to put them in a separate bowl to prevent burning.

Assemble all chopped salad ingredients in a large salad bowl, and top with almonds.

Add sesame seeds and sesame oil if desired.

Toss salad with Asian dressing or a dressing of your choice.
