Ingredients
  • Salad
  • 3 cups chopped kale
  • 1/2 cup chopped sweet peas
  • 1/2 cup chopped broccoli
  • 1/2 cup shredded carrots
  • 1/2 cup chopped cucumbers
  • 1/2 cup shredded purple cabbage
  • 1/4 cup thinly sliced green onions
  • 1/2 cup halved grape tomatoes
  • 1/2 avocado, sliced
  • 1/2 cup chopped almonds
  • 3-4 tablespoons olive oil
  • 1 clove garlic
  • 1/4 teaspoon dried ginger
  • Dressing
  • 1/4 cup olive oil
  • 1/8 cup coconut aminos
  • 1 orange, juiced
  • 1 tablespoon maple syrup (or honey)
  • salt & pepper, to taste
  • 1/4 teaspoon dried ginger
Directions
  1. Heat a small sauté pan and add 3-4 tbsp of olive oil.
  2. Once hot, add chopped almonds and sauté for about 2 minutes on high, stirring frequently.
  3. Add the chopped garlic clove and dried ginger and continue to stir.
  4. When almonds begin to brown, turn off heat and remove pan – the almonds will continue to cook so you may need to put them in a separate bowl to prevent burning.
  5. Assemble all chopped salad ingredients in a large salad bowl, and top with almonds.
  6. Add sesame seeds and sesame oil if desired.
  7. Toss salad with Asian dressing or a dressing of your choice.
