Ingredients
  • Bread Salad
  • 8 ounces cubed Ciabatta bread
  • 2 tomatoes, chopped
  • 1 yellow pepper, diced
  • 1 cup red onion thinly sliced
  • 8 fresh basil leaves, finely chopped
  • 1 teaspoon salt
  • 1/4 cup Fresh Parmesan Cheese
  • 2-3 teaspoons Balsamic Glaze
  • 1 tablespoon olive oil
  • Salad Dressing
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1/4 teaspoon black pepper
  • 1 teaspoon Mrs. Dash Italian Medley
Directions
  1. Place cubed bread in a baking dish, and drizzle with olive oil.
  2. Bake at 400* for 10-12 minutes until crispy, mixing after 5 minutes.
  3. In a large bowl place the tomatoes, peppers, onions, basil, and salt.
  4. Whisk the dressing ingredients until thick and creamy.
  5. Pour over the salad, add the bread and mix well.
  6. Sprinkle with Parmesan cheese and drizzle with balsamic glaze.
  7. Serve and eat immediately. (This salad is not good leftover, the bread will get soggy.)

Delicious and a good use of stale bread and December tomatoes. I omitted the Italian seasoning and balsamic reduction, used white pepper and hard goat cheese.
