Ginger Pork

An Asian inspired pork stew with a lot of ginger flavor. Throw everything in the slow cooker, sit back and relax! —inpatskitchen

  • Serves 4 to 6
Ingredients
  • 2 1/2 pounds boneless pork shoulder meat cut in 1 1/2 inch cubes
  • 1 large sweet onion cut in large pieces
  • 2 tablespoons freshly grated ginger
  • 3 cloves minced garlic
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons red wine vinegar
  • 1 tablespoon cornstarch mixed with a few tablespoons of water to create a slurry
  • Sliced green onions for garnish

Directions
  1. Place the pork cubes and cut onion in your slow cooker. Combine the ginger,brown sugar,garlic, soy sauce, ketchup and vinegar. and pour over the meat and onions. Give it all a good stir.
  2. Set your slow cooker to low and cook for about 7 hours or until meat is tender. Stir in the slurry, set the slow cooker to "high" and cook for about 30 more minutes to let the sauce thicken.
  3. We like to serve this over rice mixed with broccoli florets and garnished with the green onions.

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining. My cooking style is pretty much all over the place, although I'm definitely partial to Greek and Italian cuisine. Oh yes, throw a little Cajun in there too!
