  • Serves 6
  • 4 large eggs
  • 1.5 cups sugar
  • 1 cup vegetable oil
  • 1 can pumpkin
  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup finely chopped nuts (optional)
  • 1/2 cup chocolate chips (optional)
In This Recipe
  1. In a bowl with a mixer, beat eggs at high speed. Add sugar, beat until thick and lemon colored. Turn the speed to low and pour in the oil, running the mixer a bit longer to incorporate. Beat at low speed constantly, pour in oil.
  2. Combine the dry ingredients in a bowl and begin adding it a bit at a time, alternating with the pumpkin. Mix until smooth.
  3. Pour into ungreased bundt cake pan and bake at 350 for 60-65 minutes. Let it cool completely before inverting the pan to put the cake onto a cake plate.
