Twice-Baked Mashed Potatoes

Ingredients
  • 4 large baking potatoes
  • 8 slices of bacon or bacon bits
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 8 green onions, sliced and divided (or use chives)
Directions
  1. Preheat oven to 350 degrees.Poke potatoes with a fork. Bake potatoes in preheated oven for 1 hour
  2. Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain,crumble and set aside
  3. When potatoes are done allow them to cool for 10 minutes. Scoop the flesh into a large bowl; discard the skins.Mash the potatoes. Add the sour cream, milk, butter, and cheese. Stir in the bacon, salt, pepper, and green onions.
  4. Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.
