Kim-Joy's Royal Icing
Ingredients
  • 2 2/3 tablespoons (40 grams) egg whites
  • 1 1/2 cups (210 grams) icing (confectioners') sugar
  • extra egg white and icing (confectioners') sugar to adjust and get the right consistency
Directions
  1. Use a stand mixer (or handheld electric whisk) fitted with a balloon whisk attachment to combine the egg white and icing sugar until you get a smooth consistency. Then add tiny amounts of extra egg white and/or icing sugar to get the right consistency. Add food dye to colour as desired! That is it!

I loved Kim Joy on Great British Baking Show, so I knew I had to make this! Very simple royal icing recipe, however the proportions are perfect for a nice pipeable consistency. I added a little more egg white to make it good for flooding. A good staple formula, next time I will flavor my icing with almond or lemon extract.
