Brown Butter Rice with Scallions and Soy

This is a simple but rich (and decadent) side. Butter and soy sauce combined can't be beat and when you brown that butter it gets even better!! —inpatskitchen

  • Makes about 6 servings
Ingredients
  • 1 1/2 cups long grain rice
  • 2 3/4 cups water
  • 1/4 cup soy sauce
  • 8 tablespoons butter
  • 5 - 6 scallions, thinly sliced

Directions
  1. In a medium sauce pan with a lid, stir the rice, water and soy sauce together. Bring the mixture up to a boil, cover and then simmer until the liquid is absorbed into the rice, about 15 to 20 minutes.
  2. While the rice is cooking cut the stick of butter up a bit and then in a small saucepan heat until it becomes a nutty brown.
  3. Pour the brown butter into the finished rice and add the scallions. Stir and serve.

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon.
