This instant pot version of Penne a la vodka is ridiculously easy and gets done in 20 minutes in your instant pot. It is a popular recipe in our house and I often make it without the vodka for a tomato cream pasta. —Rinku Bhattacharya /Spice Chronicles
Ingredients

3 tablespoons
olive oil

cloves garlic, minced

2 cups
diced tomatoes in their juice

1 tablespoon
fresh or dried oregano

3 tablespoons
vodka
-
1 teaspoon
salt or to taste

1 tablespoon
sugar

2 cups
cups water

12 ounces
dried penne pasta

1/2 cup
heavy cream
-
1/4 cup
grated parmasan cheese

2 tablespoons
chopped basil
Directions

Turn the instant pot to the saute mode. Heat the olive oil and add in the chopped garlic and saute until fragrant.

Add in the oregano and the diced tomatoes and stir well. Note, the tomatoes should be finely diced, if they are chunky puree lightly with the immersion blender.

Add in the vodka, salt, sugar, pasta and water.

Cover and set to manual pressure for 2 minutes.
Do a quick release after 5 minutes.

When you remove the cover the pasta will appear watery, and even under-cooked. it settles and the pasta absorbs the liquid pretty quickly. Stir in the cream and Parmesan
