This super easy Peanut Butter Granola is made into healthy, whole grain snackable clusters. With no refined sugars, it is the perfect healthy snack, topping for yogurt, or for breakfast! —Stephanie Wilson
Ingredients
-
2 cups
rolled oats
-
1/3 cup
whole wheat flour
-
1 teaspoon
baking powder
-
1/4 teaspoon
salt
-
1/2 cup
creamy peanut butter
-
2 tablespoons
canola oil
-
1/3 cup
real maple syrup
-
1 teaspoon
vanilla extract
Directions
-
Preheat the oven to 275 degrees and line a baking sheet with parchment paper.
-
Mix the oats, flour, baking powder, and salt together in a large bowl. In a separate bowl, whisk the peanut butter, canola oil, real maple syrup, and vanilla until smooth. Pour the peanut butter mixture over the oats and stir to combine. Be sure all of the oats are coated with the peanut butter mixture. I like to use a rubber spatula.
-
Transfer the granola to the prepared baking sheet; spread evenly. With a fork, I separate the granola into bite-size clusters.
-
Bake for 15 minutes; stir once. Bake for another 15 minutes until golden brown and dry to the touch. Be sure to check the granola in the last few minutes of baking, you want it to be semi-soft. Let it cool completely. It's in the cooling process that they cluster and get crunchy.
