White bean stew

Ingredients
  • 2 tablespoons Extra virgin olive oil
  • 8 Slices deli ham, quartered
  • 1 Onion, chopped
  • 4 Large garlic cloves, sliced
  • 2 Cans of white beans, drained and pureed in food processor
  • 2 Cans of cannellini beans, drained and rinsed
  • 14-15 ounces Stewed tomatoes (1 can), roughly chopped / pureed in food processor
  • 4 cups Chicken stock
  • 3/4 cup White wine
  • 1 Parmesan rind
  • 3/4 teaspoon Black pepper
  • 5 ounces Arugula or spinach
  • Baguette
Directions
  1. Heat the olive oil in a deep pan over medium heat. Add onions and ham. Brown for 5 minutes. Add garlic to the pan and cook for another 1-2 minutes.
  2. Add the roughly chopped tomatoes, pureed beans, cannellini beans, chicken stock, wine, parmesan rind and black pepper into the pan. Bring to a boil and then reduce the heat to a simmer for 45 minutes.
  3. Remove the large slices of ham (optional) and parmesan rind from the pan and discard.
  4. Stir in greens and cook until wilted, 3 minutes for spinach or 1 minute for arugula. Season with salt and pepper as necessary. Serve soup with warm bread for dipping.
