Like many of my recipes this one was inspired by an impulse buy. I kept on hearing about Lao Gan Ma's Spicy Chili Crisps everywhere I turned. One day, while at a Chinese supermarket, I saw a large jar on the shelf and it was on sale! As I put it into my basket, this picture of green beans and bacon started to form in my head. When I got home, I quickly put this dish together for dinner. It exceeded my expectations. Salty with a little bit of sweet with a subtle má là. Surprisingly not that spicy. The heat was perfect. It was so good, we had it again the next evening. Use a meaty bacon (like Hempler's European-style bacon) or ham. —HalfPint
Ingredients

1 pound
green beans or haricots verts , cut into 2" pieces

4-5 ounces
meaty bacon or ham, cut into 1" pieces

3-4 tablespoons
Spicy Chili Crisp sauce (brand: Lao Gan Ma)

salt (optional)
Directions

Steam green beans for 4-5 minutes. The green beans should be well cooked and not necessarily crisp.

While green beans are steaming, fry bacon or ham until it starts to brown, over medium high heat. Add 2 TB of the crispy chili crisp sauce and toss to combine with the bacon.

Add the steam green beans to the bacon and chili crisps. Toss gently to combine and coat the beans with the sauce. Add the remaining chili crisp sauce and combine lightly.

Taste and add a little salt if needed. Depending on the saltiness of the bacon, additional salt may not be needed. Take off heat and serve with hot rice.
