A healthy Vegan recipe that unlike most of healthy recipes, is tasty, easy and quick to make. —Mauli Shah
Ingredients

250 grams
Farro
-
3 tablespoons
Corn

3 tablespoons
peas

1.5 teaspoons
salt

1 tablespoon
cashews

1 tablespoon
Peanuts

1 teaspoon
Preferred spices

1 tablespoon
Preferred oil

Optional veggies

1 teaspoon
Turmeric

0.5 tablespoons
Red chilly powder

1 liter
Water/ Vegetable stock

3 sprigs
Cilantro (optional)
Directions

Soak Farro for 10 minutes

Dice the potato and any veggies you choose. You could use frozen veggies too. Just don't thaw them, use them directly from the freezer.

In a pot, take 1 tablespoon oil and let it heat, add any spices you chose, I added a chard of cinnamon, cloves and dried red chilies.

Add the diced potatoes and let them cook for a couple of minutes

Add the corn, peas, cashews, peanuts and any other veggies you chose.

Once the veggies are par cooked, add salt, turmeric and red chilly powder.

Add 1 liter water or Vegetable stock, add soaked and drained Farro. Cover and let it cook.

When the Farro has puffed up and is tender, the Khichdi is ready.
If you like lemon, spritz some lemon juice.

Garnish with Cilantro (Optional but AMAZING!)
