A simple and delicious burrito bowl starting with rice, tender pieces of barbequed chicken, black beans, corn, fresh salsa from scratch, and avocado to finish it off. —Dash of Amy

Ingredients
- Fresh Salsa

tomatoes, chopped small

1/2 cup
onions, finely chopped

jalapeno pepper, minced

lime, juiced

1 teaspoon
salt

1/4 teaspoon
black pepper

bunch fresh cilantro, finely chopped
- Bowls

chicken breasts, cooked

1 tablespoon
olive oil

1/2 teaspoon
salt and pepper

1/2 cup
barbeque sauce

1 cup
jasmine rice, cooked

can black beans, drained & rinsed

can corn

avocado, cubed
Directions

For the Salsa, combine all ingredients in a medium bowl and mix well. (I minced the jalapeno and cilantro in my food processor.)

Cook the chicken in a large skillet over medium heat in olive oil, season with salt and pepper.
Turn after 3-4 minutes, then add the barbequed sauce.
Cook until done, then shred or finely chop the meat.

To assemble the bowls, start with rice, then chicken, black beans, corn, salsa, and avocado. *cheese and sour cream optional*
