I’ve made this innumerable times. Wonderful (and best) served at room temp, the day it’s made. Chilling and/or freezing diminishes the creamy ‘sauce” making it more like a plain cheesecake. Still good but definitely not as satisfying.

Hi-- doesn't the original La Viña recipe recommend 40 minutes baking time? My Spanish friend recommends an internal temp of 150 F and that's how you achieve the wonderful creamy center once it sets up. 50-60 minutes seems too long.
