Ingredients
  • 1 tuna can
  • 1 ripe avocado
  • 1/4 cup Greek yogurt (65 grams)
  • 1-2 tablespoons olive oil
  • 1-2 tablespoons freshly squeezed lemon juice
  • salt, pepper
  • toasted bread or crackers, to serve
Directions
  1. Drain the tuna can if it’s in water, if it’s in olive oil, don’t drain.
  2. Cut the avocado in two (carefully, not against your hand! nobody wants avocado hand!), remove the seed and put the pulp in your blender cup or food processor.
  3. Add the tuna to the avocado, then the Greek yogurt, olive oil, fresh lemon juice, salt and pepper.
  4. Blend until smooth.
  5. Here’s some ideas about serving this: - slices of boiled egg - reserve a bit of the tuna and avocado, cubed (squeezed with lemon so it doesn’t oxidize) and put it on top
