This simple Greek salad combines fresh spinach and iceberg lettuce for a supreme combination as the base of the salad. Top it with cucumbers, red onions, kalamata olives, tomatoes, feta cheese, and pepperoncini peppers. Drizzle on the zesty lemon vinaigrette dressing for a taste sensation. —Dash of Amy

Ingredients
  • Greek Salad
  • 4 cups fresh spinach
  • 2 cups finely chopped iceberg lettuce
  • 1/2 peeled English cucumber, thinly sliced
  • 1/2 large red onion, thinly sliced
  • 1 cup kalamata olives, halved
  • 1 cup grape tomatoes, halved
  • 2-3 ounces crumbled feta cheese
  • 3 pepperoncini peppers
  • Lemon Vinaigrette Dressing
  • 1/2 cup olive oil
  • 4 tablespoons lemon juice (fresh or bottled)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon dijon mustard
  • 2 garlic cloves, minced
Directions
  1. Greek Salad
  2. Place spinach in a large salad bowl, then add the iceberg lettuce and mix together with your hands.
  3. Layer the cucumbers, onions, olives, tomatoes, feta, and peppers.
  4. Scoop individual portions of salad, and drizzle with the homemade dressing.

  2. Place all ingredients in a salad dressing shaker and shake until well mixed and thickened.
