Maple Walnut Banana Bread

This is a simple and delicious vegan, refined sugar free banana bread, a wonderful accompaniment to a cup of coffee. Make sure to use bananas that are covered in brown spots, and feel free to change it up with your favourite add-ins (dark chocolate chips go amazing!) —Elina

What You'll Need
Ingredients
  • 2 Bananas
  • 1 handful Chopped walnuts
  • 2 tablespoons Canola oil
  • 3 tablespoons Maple syrup
  • 120 grams Flour (all-purpose, whole wheat, or a mix)
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1 teaspoon Cinnamon powder
Directions
  1. Preheat the oven to 180°C / 350°F, and grease/line your loaf tin or muffin tin
  2. Peel and mash the bananas with a fork, and mix in the oil, maple syrup, and vanilla extract
  3. Mix together the dry ingredients, and stir it into the banana mixture. Add the walnuts (or any add-ins you like) and fold it into the batter
  4. Spoon it into the loaf or muffin tin, and bake in the preheated oven for about 30 minutes for a loaf, and 20-25 minutes for muffins
