This is like a griddle cake with fresh corn kernels with garlic and coriander —buenobenne
Ingredients

ears of sweet corn

2
green chilies
-
2
cloves of garlic

6 sprigs
coriander
-
1 teaspoon
coriander powder

0.5 cups
semolina or cornmeal
-
0.5 cups
shredder cheddar cheese

salt to taste
Directions

Remove the corn kernels and coarsely grind 3/4 of them with the coriander, garlic and green chilies.

Add the remaining corn kernels, coriander powder, semolina/cornmeal, cheese and salt to taste and mix well.

To a hot griddle pan greased with oil, add a scoop of the 'batter' and flatten with hands to form a 1" disc. Alternately, you could pat the disc on wax paper or on a plastic sheet and place on the hot griddle.

Keeping the heat on medium, let cook on both sides until cooked and dark brown spots appear.

Serve hot with sour cream or a condiment of your choice.
