A savory sweet potato recipe. The flavor will keep you coming back for one more taste. The surprise ingredient is the lemon zest with a really good mild extra virgin olive oil. You may want to use more lemon zest. —Shannon

Ingredients

2 to 2 1/2 pounds
Sweet Potatoes

1/3 cup
Mild extra virgin olive oil

2 to 3 tablespoons
Lemon zest
-
2 tablespoons
Unsalted butter
-
pinch
Salt
Directions

Preheat oven 400 degrees F
Pierce the sweet potatoes with a fork
Bake until tender 45 to 60 minutes
Zest lemons and add to olive oil while sweet potatoes are cooking

Scoop out flesh of sweet potatoes while still warm
Stir to combine olive oil with zest, pinch of salt and 2 tablespoons of unsalted butter
Mix will and serve warm
