This is a very flavorful summer salad that hits all the right notes: sweetness of the watermelon, saltiness and brininess of the olive, plus the smokiness of the grilled onions, making for a delicious and satisfying salad. You can call this one super umami. —Chef Reza Setayesh | Plant Loving Humans
Ingredients

large red onion

(48 oz) diced watermelon

large green pepper, medium dice

english cucumber, large dice

3 tablespoons
chopped fresh mint

1/2 cup
pitted kalamata olives

1/2 cup
cider vinegar

4 tablespoons
olive oil (optional)

2 teaspoons
salt

1/2 cup
feta (I prefer plant-based feta)

grilled pita (optional)
Directions

Peel, slice, and grill the onion until nicely charred and softened, then chill in the fridge

Prepare pepper, cucumber, mint, and olives and place in a bowl with the grilled onion

Add the vinegar and optional olive oil, toss, and adjust seasoning
-
Top with feta cheese of choice (I love using plant-based feta) and an optional side of grilled pita bread
