These banana maple muffins are both gluten free and vegan! Naturally sweetened with maple syrup, these muffins are incredibly soft and moist. —Just As Tasty

Ingredients

2 cups
gluten-free flour blend

2 teaspoons
baking powder

1/2 teaspoon
baking soda

1/4 teaspoon
salt

1/3 cup
vegetable or canola oil

1 cup
oat milk

pure maple syrup

large banana, mashed
Directions

Preheat oven to 425ºF. Line a standard muffin tin with cupcake liners.

In a large bowl, whisk the flour, baking powder, baking soda, and salt together.

In a separate bowl, mix the vegetable oil, oat milk, and maple syrup together. Stir in the mashed banana.

Using a rubber spatula, fold the wet ingredients into the dry ingredients until combined. Fill the liners 2/3 of the way up with batter.

Bake for 5 minutes, then lower the oven to 375ºF and continue baking for another 14-15 minutes. Allow muffins to cool in pan for 5 minutes before transferring to a wire cooling rack.
