This is a simple and delicious vegan, refined sugar free banana bread, a wonderful accompaniment to a cup of coffee. Make sure to use bananas that are covered in brown spots, and feel free to change it up with your favourite add-ins (dark chocolate chips go amazing!) —Elina

Ingredients

Chopped walnuts

Canola oil

Maple syrup

120 grams
Flour (all-purpose, whole wheat, or a mix)

Baking powder

1 teaspoon
Vanilla extract

Directions

Preheat the oven to 180°C / 350°F, and grease/line your loaf tin or muffin tin

Peel and mash the bananas with a fork, and mix in the oil, maple syrup, and vanilla extract
-
Mix together the dry ingredients, and stir it into the banana mixture. Add the walnuts (or any add-ins you like) and fold it into the batter

Spoon it into the loaf or muffin tin, and bake in the preheated oven for about 30 minutes for a loaf, and 20-25 minutes for muffins
