Small head of cauliflower
200 grams
(1/2 pound) Green beans
100 grams
Mixed Greens
Directions
Wash and cut the cauliflower into florets, trim the green beans and cut into 2 inch pieces. Boil a pot of water, add the vegetables and cook until tender (about 5 minutes). Drain and let cool
In a bowl, mix together the drained white beans with all the marinade ingredients. Let sit for 10 minutes
Once the cauliflower and green beans have cooled, add the marinated white beans and mixed greens. Toss gently to combine
