The French classic soup recipe combining caramelized onions, beef broth, sherry, salt, and pepper; top with croutons and cheese. Comfort food at it's finest. —Dash of Amy

butter

olive oil

large onions, diced

1/4 cup
sherry

32 ounces
beef broth

1 1/2 teaspoons
salt

1/4 teaspoon
black pepper

1 teaspoon
parsley

1/4 cup
shredded Italian cheese (per bowl)

5-8
flavored croutons (per bowl)
Directions

Heat a large stock pot over medium heat, add butter and olive oil; once butter is melted add the onions.

Cook 5 minutes, then mix; cook another 5 minutes, then mix; cook an additional 5 minutes until onions are soft and browning.

Add the sherry, broth, and spices.

Bring to a boil, and then simmer for 5 minutes for flavors to blend.

Pour soup into oven safe serving bowls, top with croutons and cheese.

Broil for 5 minutes, then sprinkle with some parsley, and serve.
