French Onion Soup

The French classic soup recipe combining caramelized onions, beef broth, sherry, salt, and pepper; top with croutons and cheese. Comfort food at it's finest. —Dash of Amy

What You'll Need
Ingredients
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 3 large onions, diced
  • 1/4 cup sherry
  • 32 ounces beef broth
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon parsley
  • 1/4 cup shredded Italian cheese (per bowl)
  • 5-8 flavored croutons (per bowl)
Directions
  1. Heat a large stock pot over medium heat, add butter and olive oil; once butter is melted add the onions.
  2. Cook 5 minutes, then mix; cook another 5 minutes, then mix; cook an additional 5 minutes until onions are soft and browning.
  3. Add the sherry, broth, and spices.
  4. Bring to a boil, and then simmer for 5 minutes for flavors to blend.
  5. Pour soup into oven safe serving bowls, top with croutons and cheese.
  6. Broil for 5 minutes, then sprinkle with some parsley, and serve.
