Ingredients
  • 2 Fresh fish skins
Directions
  1. Separate the skin from the fish and clean it gently with a knife
  2. Blanch the fish skin quickly
  3. Use your fingers to remove the fish scales with ease
  4. Dry the skins at 60°C until they are completely dry
  5. Rehydrate & fry them in 210°C hot oil until they puff
  6. Season with salt
