This classic Vietnamese sandwich is packed with flavor! It starts with chicken slow cooked in the crock pot drenched in Asian flavors, homemade Sriracha mayo, and finished with raw vegetables, and packed into a sub roll. —Dash of Amy

Directions
- Sandwich Ingredients

Place first 8 ingredients in a crock pot, turn heat to low, and cook 2-3 hours, until chicken is completely cooked.

Using two forks shred the chicken into smaller pieces for the sandwiches.

Spread the sriracha mayo on both sides of an open sub roll.

Top with chicken, cucumbers, radish, carrots, onions, jalapenos, and fresh cilantro leaves.
