cucumber, peeled and sliced thin
radishes, sliced thin
jalapeno peppers, sliced
onion, sliced thin
fresh cilantro leaves

In This Recipe
Place first 8 ingredients in a crock pot, turn heat to low, and cook 2-3 hours, until chicken is completely cooked.
Using two forks shred the chicken into smaller pieces for the sandwiches.
Spread the sriracha mayo on both sides of an open sub roll.
Top with chicken, cucumbers, radish, carrots, onions, jalapenos, and fresh cilantro leaves.
Combine all ingredients in a small mixing bowl. Store in the refrigerator.
