Sicilian Pizza or Sfincione

Sicilian style pizza, traditionally called Sfincione is a thick crust pizza topped with onions and breadcrumbs, tomatoes and a hard cheese. In this recipe, toppings include sun dried tomatoes, basil and mozzarella cheese. Traditional recipe has onions and bread crumbs as toppings. This recipe is a lip smacking variant.

Ingredients
  • 3 cups All purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 5 teaspoons Olive oil
  • 1 cup San Marzano Tomatoes
  • 1/2 cup Fresh Basil
  • 1 .5 cups Fresh Mozzarella
  • 1 teaspoon Nutritional Yeast
  • 1.5 cups Warm water
  • 2 Crushed and minced garlic
  • 1/2 cup Sun dried tomatoes.
Directions
  1. In a mixing bowl, mix flour, sugar, water, salt, yeast and two tea spoons olive oil. Knead mixture to a dough and set aside for 2 hours at room temperature
  2. Place a baking sheet in a medium baking pan. Brush 1 table spoon olive oil in the pan. Place dough and stretch to fill the pan.
  3. Brush mixture of olive oil and minced garlin
  4. Top with crushed San Marzano tomatoes (pizza sauce will also do). Top with fresh mozzarella, basil, sun dried tomatoes and olive oil. Sprinkle salt and a few dashes of EVOO (extra virgin olive oil)
  5. Preheat oven to 450° C and place pan ready to bake. Bake for 12-15 minutes until crust is golden brown.
  6. Remove from oven, let pizza cool for 5 minutes before removing from pan. Cut and serve.
