Instead of simply infusing wine with traditional mulling spices, I like to make this bubbly twist: First, boil a thick cocktail syrup using The Spice Hunter’s Mulling Spices, sugar, and red wine. After that, all you have to do is add it to a glass with a bit of Prosecco, plus a strip of lemon peel, and you've got yourself a refreshingly festive drink. —Posie (Harwood) Brien

Ingredients
- For the mulled wine syrup:

water

2 tablespoons
The Spice Hunter Mulling Spices

1/2 cup
sugar

2 cups
red wine
- For the sparkler:

4 ounces
sparkling wine, such as Prosecco

1/2 ounce
mulled wine syrup (see above)

strip of lemon peel
Directions

Place the water and The Spice Hunter Mulling Spices in a small saucepan. Bring to a boil, and boil for 3 minutes. Reduce to a simmer, then stir in the sugar. Whisk until the sugar is completely dissolved, then add the red wine. Keep at a simmer and cook for about 15 to 20 minutes, or until the mixture is thick and syrupy.

Remove the heat and strain through a fine mesh sieve, then let cool fully. Chill before using in the cocktail.

To make the cocktail, add the prepared mulled wine syrup to a glass. Top with sparkling wine and a twist of lemon. Serve and enjoy.
