These recipe is a vegan version of blondies with a cheesecake and coffee twist. Delicious and easy to snack on with your afternoon tea or coffee. —plantbasedrecipes

What You'll Need
Ingredients
  • Cake
  • 1 cup flour
  • 1/4 cup cane sugar
  • 1 teaspoon baking powder
  • 1/4 cup canola oil
  • 1/2 cup buttermilk (homemade or store-bought)
  • 1 teaspoon vanilla essence
  • 1 pinch fine salt
  • Tiramisu Cheesecake Swirl
  • 1/2 cup buttermilk (homemade or store-bought)
  • 100 grams vegan cream cheese
  • 1 teaspoon coffee powder (instant)
  • 50 grams soy milk
Directions
  1. Preheat the oven to 365F. Line the bottom of baking pan with parchment paper.
  2. In a bowel whisk together flour, baking powder, cane sugar and salt.
  3. Add buttermilk, vanilla and canola oil
  4. Make the cheesecake swirl by mixing vegan cream cheese and soy milk.
  5. Dollop one half of cheesecake swirl mixture across the top of the blondie batter.
  6. Add instant coffee powder to the second part of cheesecake swirl mixture.
  7. Dollop the rest of you tiramisu cheesecake swirl mixture on the top (in between), then use a butter knife to swirl into the batter to give a nice marble effect on the top.
  8. Bake 365F 25-30 min until golden brown all over.
  9. Once baked, let cool completely.
