Roasted Butternut Squash

I love Butternut Squash, and there’s only one way I ever fix it. It’s very simple, and an awesome side dish to serve with Turkey, Chicken, Ham, Fish, Meatloaf, actually it’s good with just about anything. Here’s how I make it:
Ingredients
- 1 Butternut Squash
- 2 tablespoon Butter
- 1 1/2 teaspoon Brown Sugar
- Salt and Pepper

- Step 1
Rinse off the outside of the Squash. Cut in half lengthwise, and remove seeds. Cut in a diamond pattern as shown in photos. A diagonal cut in one direction, and then turn the squash around and cut it going in the other direction. Simple.
- Step 2
Spray a casserole or cake pan with cooking spray. Place both halves of Squash in the dish, skin side down.
- Step 3
Spread Butter on the flat part of the Squash. Divide the remaining butter between the two cavities.
- Step 4
Sprinkle with Salt and Pepper. Sprinkle a few pinches of Brown Sugar over entire Squash.
- Step 5
Bake at 350 ° F uncovered for about 1 hour 15 minutes. (This will depend on the size of the Squash). Check with a fork to see when it’s nice and soft. When it is, eat it!
