I love Butternut Squash, and there’s only one way I ever fix it. It’s very simple, and an awesome side dish to serve with Turkey, Chicken, Ham, Fish, Meatloaf, actually it’s good with just about anything. Here’s how I make it: —ChewWannaEat?

What You'll Need
Ingredients
  • 1 Butternut Squash
  • 2 tablespoons Butter
  • 1 1/2 teaspoons Brown Sugar
  • Salt and Pepper
Directions
  1. Rinse off the outside of the Squash. Cut in half lengthwise, and remove seeds. Cut in a diamond pattern as shown in photos. A diagonal cut in one direction, and then turn the squash around and cut it going in the other direction. Simple.
  2. Spray a casserole or cake pan with cooking spray. Place both halves of Squash in the dish, skin side down.
  3. Spread Butter on the flat part of the Squash. Divide the remaining butter between the two cavities.
  4. Sprinkle with Salt and Pepper. Sprinkle a few pinches of Brown Sugar over entire Squash.
  5. Bake at 350 ° F uncovered for about 1 hour 15 minutes. (This will depend on the size of the Squash). Check with a fork to see when it’s nice and soft. When it is, eat it!
