Rutabaga Casserole

Deliciously different casserole that we use for Thanksgiving. Even Non Rutabaga lovers will love it! Passed to me from my Canadian mother in law. —Picholine

What You'll Need
Ingredients
  • 8 cups Large dice Rutabaga
  • 1 teaspoon Salt
  • 1/4 cup Heavy Cream
  • 1/2t teaspoons Nutmeg
  • 2 tablespoons Brown Sugar
  • 2 Eggs beaten
  • 2 tablespoons Butter melted
  • 1/4 cup Toasted pecans on top (optional)
Directions
  1. Boil Rutabagas until soft.
  2. When cooled, place in Food Processor and purée till smooth
  3. Place puréed Rutabaga in a large bowl and mix in the other ingredients:salt,cream,nutmeg,sugar, eggs and melted butter. Mix well till all incorporated.
  4. Place in a 2 quart casserole dot with butter (optional) Bake in a preheated oven at 350° For 35-45 minutes
  5. Make ahead at least a day!
