Harvest Granola is oh so heavenly and hearty and tastes like the best harvest of grains and nuts! Enjoy the granola with fresh fruit or on top of acai bowls or chia seed pudding. —simmering essence

Directions

Combine the oats through chia seeds on the ingredients list in a large roasting pan or bowl.

Combine the coconut oil through sea salt in a large saucepan over medium heat, stirring until well mixed and barely comes to a boil. Pour over dry ingredients and mix well.

Divide granola between 2 parchment lined baking sheets. Bake at 350 for 15-20 minutes, stirring halfway through baking. If you like a chewier, lighter granola, keep your eye on it and take out early. If you like it to get crunchy and darker take out at about the 20 minute mark. Stir in dried fruit immediately after it comes out of the oven. Or…omit. Store cooled granola in airtight containers. Or gift and deliver! Keeps well for a couple of weeks. Freezes well for a few months.
