Vegan Banana Muffins

This recipe is for all vegans, and even the Non-vegans! It makes vegan banana coconut muffins but you don't have to follow the recipe exactly if you don't like all the ingredients. If you don't want it to be vegan just substitute the vegan ingredients with normal ingredients. Even though they are vegan they taste just the same and delicious! (Will also make a delicious banana bread!)
Inspired by Sophie- wholehearted eats, (Blueberry muffins) but with my own twist!- (bananas)

What You'll Need
Ingredients
  • 2 1/4 cups Flour
  • 1 cup coconut milk
  • 1/2 cup Coconut oil
  • 3/4 cup White sugar
  • 1/2 teaspoon salt
  • 2 tablespoons flax meal
  • 6 tablespoons water
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 3 tablespoons vegan chocolate chips
  • 2 bananas
Directions
  1. Add the flour, sugar, salt, and baking powder into a large bowl. Then mix it all together by hand with a whisk.
  2. Add the flax meal into a small bowl then put in the water and let is sit for 5 minutes. It should start to become mushy.
  3. Then in a medium bowl mix the flax meal, vanilla, milk, and oil together by hand with the same or different whisk.
  4. Add all the wet and dry ingredients into a large bowl and hand whisk it until you can only see the ingredients mixed together. (make sure you get all of it!)
  5. Then cut the bananas into little pieces (They should look like coins in a way) then add them into the batter and mix everything together until it looks yellow and you can't see the banana.
  6. Melt the chocolate chips in the microwave for 1 minute then take them out and add them to the batter and mix it until they can't be seen.
  7. Set the oven to 350 F and scoop the batter into muffin/cupcake cups and put them in a 12 muffin pan. When the oven is ready put them in for 30 min.
  8. After they are done take them out and let them cool for 7-10 minutes. When they are cooled you can add something decorative or some frosting and sprinkles. Then ENJOY!!!!!!! :)
