Pancit is a traditional Filipino dish, first introduced to me by a good friend. Traditionally, pancit is made from bean threads, soy sauce and a combination of protein and veggies. This here is my Healthyish version. —Healthyish Foods

What You'll Need
Ingredients
  • 12 shrimp peeled and deveined
  • 4-5 ounces maifun brown rice noodles or bean threads
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger - remove skin first
  • 1/2 cup veggie or chicken broth
  • 1 cup carrot peeled and julienned
  • 1 cup red or yellow bell pepper- julienned
  • 6-8 ounces baby bella mushrooms - sliced
  • 1/4 cup soy sauce
  • 2 tablespoons light brown sugar
  • 1 tablespoon fresh squeezed lime juice
  • 2 teaspoons crispy garlic in chili oil
Directions
  1. Boil a pot of water and cook your maifun brown rice noodles according to the package. I cooked mine al dente. Drain and rinse them with cold water to stop the cooking process. Set aside.
  2. Grab an 11-inch / 3.5 quart sauce pan and gently spray it with cooking spray. Add the minced garlic and ginger over medium heat.
  3. Once the garlic and ginger begin to brown, add the veggie broth and deglaze the pan.
  4. Next, you’ll add the julienned bell pepper, carrots and mushrooms.
  5. Once the veggies begin to soften, add the soy sauce, brown sugar, crunchy garlic with chili oil, and lime juice. Stir well.
  6. Then, you’ll add the peeled and deveined shrimp. Simmer everything together until the shrimp are pink and fully cooked. If they look opaque they are not fully cooked.
  7. Reduce the heat to low and toss in your al dente maifun brown noodles. Once the noodles are well coated in the sauce, add everything to a platter. Top with cilantro and serve hot!
