Just tried this.... Wow!! I fell in love with Asian cuisine when a very amazing friend took me and my sister and her family to south Korea last year in April. The food and coffee couldn't compete with food or coffee I had in the US. It was fresh and delicious in Korea. And I came across many spam focused microwave foods at the convenience stores. I ate them whenever we couldn't eat out. Because it reminded me of home when I was homesick. My go to convenience store food was Hetbahn rice bowls with either spam or chicken variety microwavable. Kimchi fried rice with spam frozen. Regular fried rice frozen. These frozen and microwave foods were delicious and that's still an understatement. Ever since we left i was making dakgalbi and so many other inspired foods we were taught there, but all of a sudden I remembered this rice bowl. I just had to find a recipe and recreate it. To bring me back to Korea. After making this I am hooked. It will be my go to recipe for this from now on. You saved my life! Thank you
Also I used karo light corn syrup instead of maple syrup because I had none and it worked still! If there's any other substitution for maple syrup that's better let me know!

I used regular sesame oil instead of toasted sesame oil. It was still great. But would've liked to try it with the toasted version. I'll try it and update when I'm able to get it

This is good. I like SPAM. And, contrary to popular belief, it is not "mystery meat"--simply pork shoulder, ham and 4 more ingredients. In fact, on the Hormel Foods (maker of SPAM) website, there is a letter from Chairman Khrushchev to the company thanking it for SPAM saving the Soviet troops during the siege of Leningrad.

It's perfect for days you don't have fresh meat and don't want to defrost anything. You can even make this into a chicken rice bowl instead if you don't have spam! I loved it.
