This Has to be the sandwich of the year. Oxtails that’s been cooking for 3 hours falling off the bone coconut milk & the pickled onions brings the sweetness & then the crunchiness from the Parmesan cheese crusted on the outside of the bread Delicious ... —Maurice Farmer

What You'll Need
Ingredients
  • Oxtails, beef base , Onions , brown sugar , Fresh Garlic, Coconut milk Unsweetened, Curry Powder
  • 4 pounds Oxtails
  • 1/3 cup Brown Sugar
  • 1 sprig Fresh Rosemary
  • 2 tablespoons Fresh Garlic
  • 1 cup Worcestershire
  • 1/2 cup Coconut milk
  • 3 tablespoons Curry Powder
  • 4 cups Water
  • 4 tablespoons Kosher Salt
  • 3 tablespoons Cracked Black Pepper
  • 2 tablespoons White Truffle oil
  • 4 pieces Dry bay leaves
  • Brioche Bread , Mustard cheese, havarti cheese ,red onion , red wine vinegar, sugar
  • 8 pieces Brioche
  • 8 pieces Havarti Cheese
  • 8 pieces Mustard cheese
  • 4 cups Red onion
  • 2 cups Water
  • 3 sprigs green onions sliced thin
  • 1/3 cup White Sugar
  • 1 splash Black pepper to taste
  • 1 sprig Kosher Salt to taste
  • 5 cups Parmesan Cheese Shredded
  • 1 splash Pan spray
Directions
  1. Oxtails: Using a large pot making sure dry add truffle oil inside turning on high heat. Seasoning the oxtails add oxtails add water and rest of ingredients to the heated pot after ten minutes of cooking covered turn heat down to med high heat for 3 hours. Once done rest oxtails for until cool enough for you to pull the meat off the bone placing in a bowl until ready to use.
  2. Pickled Onions: using a knifes thinly slice onions, turn on high heat using a medium sizes pot add the red wine vinegar & water & sugar cooking after ten minutes until they are marinated add pinch of salt & pepper to taste set aside to cook off until ready to use
  3. Using a cutting board. Place each slice of bread down using pan spray on one side of bread. Next take Parmesan cheese sprinkling & cover each slice. Using a none stick 8” to 10” pan turning on medium high heat let the pan heat up then drop the Parmesan side down on the pan then add two slices of mustard cheese on one slice & havarti cheese on the other slice add hand full of oxtails on one slice of bread. Add pickled onions on top of the oxtails & green onions season with salt & pepper to taste .. take a picture post it
