Ingredients

Carrots

Onion

Garlic cloves

Ginger

650 milliliters
Vegetable broth

Olive oil

Salt and pepper, to taste

Optional toppings (pumpkin seeds, sesame seeds, croutons, etc...)
Directions

Peel and slice the onion, garlic, and ginger. Wash and chop the carrots (I don't bother peeling)

Add the olive oil and onion to a pot and sauté on medium heat until the onion starts to turn translucent. Add the garlic and ginger, sauté for a few more minutes until fragrant

Add the vegetable broth and carrots and bring it to a boil. Lower the heat to a simmer, and cook covered for about 20 to 25 minutes, until the carrots are soft

Transfer to a blender (or use an immersion blender) and blend until smooth. Ladle into bowls and garnish with desired toppings
