This is a recipe developed in Greece and Turkey mostly, thus aubergines cooked in sauce of tomatoes actually. Very light and tasty food.
A) INGREDIENTS
-6 aubergines medium or bigger size
-3 Fresh tomatoes
-One onion
-Olive oil, up to 4-5 tablespoon
-Salt, pepper upon option
-Grained white cheese
-Mint
-One pinch garlic cut to very small pieces
B)Preparation
-We wash aubergines and then we trace them with a knife in the middle each one
-We put them in a casserole to boil but not well done.
-After washing tomatoes we blend them in blender, so that they becme kind of juice.
-After boiling aubergines, we put them in a flat big plate of glass or porcelain, as they are cut; then we add the juice of tomatoes, we cut mint to very small pieces, and onion to bigger pieces and garlic as cut accordingly.
We mix with a big spoon, then we add olive oil, salt and some pepper, upon option, and then we add grained white cheese.
We let all this mix get baked, for round 40 min, in 170-200 C, by checking once every 15 min,
