If you've got a mountain of zucchini from the garden you're not quite sure what to do with, or if you just love zucchini (and homemade fries), this recipe is for you.
Once you see how simple it is to make these zucchini fries, you'll make them time and time again. Enjoy! —Vanessa Gordon
Ingredients
-
4-5
zucchini
-
300 milliliters
whole milk (or oat milk)
-
2 cups
plain flour
-
1 liter
vegetable oil (for frying)
-
1 pinch
sea salt flakes
-
1-3
lemon wedges (for squeezing)
Directions
-
Prepare the zucchini by cutting into thin strips using a mandolin. You can do this by hand if you dont have a mandolin.
-
Heat the vegetable oil in a saucepan.
-
Dip the zucchini strips in flour, then in milk, before frying in batches for 2-3 minutes until golden. Frying in batches will ensure you don't overcrowd the pan, and will prevent soggy fries.
-
Drain the fries on a few sheets of paper towel. Serve while hot, sprinkle generously with sea salt flakes and a squeeze of lemon juice.
