Ingredients

2 tablespoons
dairy free butter

1 cup
boiled shredded chicken

onion, chopped

garlic cloves

1 teaspoon
salt

1/2 teaspoon
dried thyme

1 teaspoon
black pepper

4 cups
chicken stock or plain water

4 tablespoons
gluten free flour

1 cup
dairy free cream
-
gluten free croutons, as required
Directions

Boil and shred the chicken. Reserve the stock. Melt butter in a pot on medium high heat. Then add garlic and onions, saute until tender.

Add shredded chicken, salt and pepper and cook a few more minutes. Then sprinkle the gluten free flour and saute for a few minutes.

Then pour the chicken stock, bring it to boil. Then simmer until thick.

Add the dairy free milk/cream and cook for a few minutes. Adjust the seasoning. For smooth soup, place it in a blender and blend to desired consistency.

Serve hot garnished with parsley and gluten free croutons.
