Blueberry Breakfast Bars

What You'll Need
Ingredients
  • 3.5 cups Blueberries
  • 1/3 cup coconut oil
  • 2.5 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup shredded coconut
  • 2 teaspoons flaxseed
  • 1 cup oats
  • 1.5 cups oat flour
  • 1.5 cups almond flour
  • 1/3 cup coconut oil
Directions
  1. Add the almond flour, oat flour, oats, and coconut together in a medium sized bowl. Pour in the maple syrup and coconut oil and mix well.
  2. Add blueberries to a pot on the stove and cook at medium-low heat. Add the sugar and let it slowly cook down until the blueberries burst and it becomes a bit liquid like. Add your chia seeds to the mix and stir it until it is well combined. Remove from heat and preheat the oven to 350 degrees.
  3. Use a square pan that is either 8x8 or 9x9 and place parchment paper in the bottom of the pan. Add about half or a little more of the flour mix to make a solid base at the bottom of the pan. Press is down firmly and then pour your blueberry mix on top. Use the remaining flour mix to add to the top of the blueberries.
  4. Pop your pan into the oven and cook for 30-35 minutes. Once the oats have become nice and golden, remove it from the oven and set aside to cool. Allow the mixture to fully cool before cutting into squares

This is a promising recipe, exactly what I was looking for when my spouse needed to be gluten free for a period and I had an abundance of blueberries. However, it needs a serious edit. The ingredients don’t match the instructions in some pretty critical ways. One ingredient is repeated twice, one doesn’t show up in the instructions and then the instructions feature 2 ingredients that aren’t in the ingredient list. I improvised/interpreted based on what I thought would make the most sense, but I have a flush pantry and have been cooking and baking for a long time. The average person would be confused and frustrated by this, and potentially out a lot of expensive ingredients. Please fix!

Very very disappointing. I went out and got all the ingredients and started to make it, only to realize the ingredients don't match the instructions. Kaitlin Gooding, please edit this recipe.
