Ingredients
-
3.5 cups
Blueberries
-
1/3 cup
coconut oil
-
2.5 tablespoons
sugar
-
1/2 teaspoon
cinnamon
-
1/3 cup
shredded coconut
-
2 teaspoons
flaxseed
-
1 cup
oats
-
1.5 cups
oat flour
-
1.5 cups
almond flour
-
1/3 cup
coconut oil
Directions
-
Add the almond flour, oat flour, oats, and coconut together in a medium sized bowl. Pour in the maple syrup and coconut oil and mix well.
-
Add blueberries to a pot on the stove and cook at medium-low heat. Add the sugar and let it slowly cook down until the blueberries burst and it becomes a bit liquid like. Add your chia seeds to the mix and stir it until it is well combined. Remove from heat and preheat the oven to 350 degrees.
-
Use a square pan that is either 8x8 or 9x9 and place parchment paper in the bottom of the pan. Add about half or a little more of the flour mix to make a solid base at the bottom of the pan. Press is down firmly and then pour your blueberry mix on top. Use the remaining flour mix to add to the top of the blueberries.
-
Pop your pan into the oven and cook for 30-35 minutes. Once the oats have become nice and golden, remove it from the oven and set aside to cool. Allow the mixture to fully cool before cutting into squares
