Healthy Peanut Butter S'more Bar

A crumbly graham cracker crust, layered with a fudgy peanut butter brownie, and topped with toasty marshmallows. A delicious treat that can be kept in the freezer. —cokocooks

What You'll Need
Ingredients
  • 16 individual graham crackers
  • 1 cup honey nut cherrios
  • 1/4 cup sugar free powder peanut butter
  • 2 tablespoons monkfruit sweetener or coconut sugar
  • 3 tablespoons plant based butter
  • 1 cup pureed pumpkin
  • 1/4 cup creamy peanut butter
  • 1/4 cup black cocoa powder
  • 1/4 cup maple syrup (sugar free works)
  • 1/2 teaspoon baking powder
  • 1/4 cup powder peanut butter (no sugar)
  • 1/4 cup monkfruit sweetener or coconut sugar
  • 1/4 cup any dark chocolate chips
  • 1 cup mini marshmallows
Directions
  1. In a food processor pulse the crackers and cherrios until crumbs. Then add in powder peanut butter and sweetener.
  2. Melt the butter and mix that in with the crumbs until it is combined
  3. In a 8x8 baking pan lined with parchment paper pour the crumbs into the pan and evenly spread in the bottom of the pan. Press down the crumbs making sure an even layer is packed down in the bottom of the pan and then place in the freezer.
  4. Preheat oven to 350 degrees
  5. Whisk the wet ingredients of the chocolate layer together in a small bowl
  6. Combine the dry ingredients in a separate bowl and add the wet ingredients in. Stir to combine
  7. Take the crust out of the freezer and dollop the chocolate batter over the crust. Then gently spread evenly. Be sure to be gently so the crumbs do not come up in the crust.
  8. Sprinkle the chocolate chips over the brownie layer
  9. Bake for about 15- 18 minutes or until batter is set
  10. Sprinkle marshmallows over the top and set the oven on broil. Place the pan in the oven and be sure not to leave because they will cook within 1-2 minutes.
  11. Bake out of the oven and let cool and the place in fridge/freezer to cool completely. Cut bars into 9 even pieces and store in the fridge or freezer!
