Test Kitchen Notes
This creamy strawberry oatmeal comes from Marcus and MJ Hill, the father-son duo behind the sweet morning ritual that took over the internet last summer (if you haven’t seen the adorable videos of the pair dancing in the kitchen while cooking together, check ‘em out here).
Every Sunday, 7-year-old MJ and his dad wake up early to prep and deliver breakfast in bed to MJ’s mom—a tradition they call #RoomService. Dishes range from cheesy scrambled eggs with bacon to fluffy French toast, but this simple oatmeal infused with sweet-tart strawberry flavor is a recurring star. It’s a cinch to make for laid-back brunches and busy weekday mornings alike—just blitz the strawberries with milk and cook with oats till it’s all thick and creamy. A dash of vanilla and pinch of salt enhances the flavors (a sprinkle of brown sugar or honey drizzle would also be welcome for a bit of extra sweetness).

Ingredients
-
1 cup
milk
-
1 cup
water
-
2 cups
fresh strawberries, hulled and roughly chopped, plus 1/2 cup diced
-
1 cup
rolled oats
-
1/4 cup
steel-cut oats
-
1 pinch
kosher salt
-
1/2 tablespoon
vanilla extract
Directions
-
Combine the milk, water, and 2 cups chopped strawberries in a blender and blend until smooth. Set aside.
-
Add the rolled oats, steel-cut oats, and salt to a medium sauce pot set over medium heat. Pour the milk-strawberry mixture, plus the vanilla extract, into the pot and stir to combine.
-
Cook the oats, stirring frequently, over medium heat until thickened, about 10 to 15 minutes. Once thickened, gently stir in the remaining 1/2 cup diced strawberries and serve warm.
