Sweet and tart cherries are paired with mildly bitter, semi-sweet premium chocolate and roasted almonds. Quick and easy, gluten-free, and vegetarian. —Quisine Queen B
Ingredients
- Oatmeal
-
1/2 cup
old-fashioned oats
-
1 pinch
sea salt
-
1/8 teaspoon
ground cinnamon
-
3/4 cup
water
-
2 tablespoons
sweet cream flavored coffee creamer
-
1/4 cup
almond milk, unsweetened vanilla
- Cherry Chocolate Topping
-
3 tablespoons
semi-sweet chocolate, chopped
-
1/3 cup
fresh sweet cherries, halved and pitted
-
1 teaspoon
pure cane sugar
-
1/8 teaspoon
vanilla extract
-
1 tablespoon
roasted sliced almonds
Directions
-
Prep the cherries by cutting them in half with a pairing knife. Then, gently remove the seed by moving the tip of the knife around the edge of the seed until it pops out. Place the cherries in a small bowl and discard the seeds. Sprinkle them with the sugar and stir to evenly coat. Microwave the cherries on high for 30 seconds. Next, add the vanilla extract and stir again. Set them aside as you prep the oatmeal.
-
In a separate small serving bowl, add the oats, spices, and salt. Next, pour in the water and coffee creamer; stir to combine. Microwave for 2 minutes 30 seconds or as instructed on the product's packaging.
-
Chocolate time! Gently mix in half of the chopped chocolate (about 1.5 tbsp) into the warm oats. Use mostly the larger pieces to create puddles of chocolate. Be careful not to overmix the oatmeal in order to prevent the oats from looking muddy. Then, use your spoon to pull around the edges of the bowl as you pour in the almond milk (to prevent the chocolate from hardening).
-
Lastly, top the oatmeal with the cherries (and their juice) and sprinkle the remaining chocolate over the top. Add the almonds for added texture. Eat and feel the love!
